This week flew by. I planted my first lemon tree and I’m excited to see if it thrives. Fingers crossed — I’ll celebrate quietly the first time I harvest fruit. Also, my toddler gave me two straight nights of uninterrupted sleep, and I feel refreshed and ready to share this crunchy chicken salad with fruit and nuts.

I shredded leftover rotisserie chicken, chopped red onion, crisp honeycrisp apple, and celery, and mixed them with a tangy dressing. We spread the salad on sandwich bread and cut it into bite-sized sandwiches — simple, quick, and crowd-pleasing.

The salad was a hit, and the host’s aunt suggested adding nuts next time. I tried her tip a few weeks later and it transformed the dish: toasted walnuts and dried cranberries added crunch and sweetness, while fresh dill brightened the flavors. It quickly became a family favorite.

Ingredients

  • 2 Cups shredded rotisserie chicken
  • ¼ Cup red onion, chopped
  • 1 Cup honeycrisp apple, cubed
