Carnivore Eggs Benedict With Easy Hollandaise Sauce
This weekend brunch staple is one I make often. Sometimes I serve just the eggs and sauce on a plate. If you prefer a bun, this cloud bread recipe is a carnivore-friendly option (cloud bread is optional).
The rest is straightforward: poached or baked eggs, butter, and an optional squeeze of lemon for brightness.

Carnivore Eggs Benedict is easy to make and fully carnivore-friendly if you choose. Use cloud bread as a base or skip the bun and enjoy the eggs and hollandaise on their own. Add ham, bacon, or smoked salmon for variety.
Ingredients
- 1 full recipe of Cloud bread (optional)
Easy Baked Eggs
- 6 eggs
- Salt to taste
Hollandaise Sauce
- 3 egg yolks
- 1 tsp lemon juice (optional for strict carnivore)
- 1 stick butter, melted but not hot
Instructions

For the baked eggs:
- Preheat the oven to 350°F (175°C).
- Using a silicone muffin mold, crack one egg into each cavity.
- Sprinkle lightly with sea salt to taste.
- Bake 10–20 minutes, depending on how set you like the yolks and whites. I prefer fully cooked whites.

For the Hollandaise:
- Melt the butter so it is liquid but not hot (about 30 seconds in the microwave).
- Place the three yolks in a medium container or mason jar.
- With a stick blender or hand mixer, begin blending and very slowly drizzle in the melted butter. Keep blending until the mixture emulsifies and becomes creamy (about 5+ minutes).
- If using unsalted butter, add a pinch of salt to taste.
- About halfway through, add the lemon juice if using, and continue blending until fully incorporated.

Bringing it together:
- Place two cloud bread buns per plate if using; toast if desired.
- Top each bun with one baked egg.
- Drizzle about 1 tablespoon of hollandaise over each egg and serve immediately.
Notes
- For strict carnivore, omit the lemon juice from the hollandaise.
- One stick of butter equals 8 tablespoons (4 ounces).
- Suitable for an 80/20 carnivore or ketovore approach.
- Traditional Eggs Benedict uses poached eggs—feel free to poach instead of bake.
- Use any carnivore-friendly bun or skip the bun entirely.
- Adding cooked bacon or ham creates a more traditional Eggs Benedict experience.
