Wash, remove stems, and quarter the strawberries. Place them directly in a saucepan with the sugar and water.

Heat the mixture until it reaches a boil, then reduce to a simmer and cook uncovered for about 20 minutes, stirring occasionally. The liquid will deepen in color and reduce slightly, becoming syrupy. If you prefer a thicker syrup, simmer a little longer.
When the strawberries are soft and the liquid has taken on a rich red hue, strain the syrup through a fine-mesh strainer into a clean container. For an extra-clear syrup—ideal for gifting—line the strainer with cheesecloth and avoid pressing on the fruit; forcing the berries through the mesh can cloud the syrup.
Cool the syrup to room temperature, then refrigerate. Stored in the fridge, it will keep for about a month.
