2. Simmer chicken and peppers in brine and butter

Sprinkle the remaining ranch over the seared chicken, add the pepperoncini and about 1/4 cup of the jar brine, then tuck in the butter. Cover and reduce the heat to low, simmering for 25–30 minutes. Check occasionally; if the pot looks dry, add about 1/4 cup of broth or water.

When the internal temperature reaches 165°F (74°C), remove from heat and let the chicken rest for 10 minutes. Shred with forks and stir the meat back into the sauce to coat it thoroughly.
