I used to jump into fall as soon as August hit, but lately I’m clinging to summer—especially here in Connecticut, where late summer brings stone fruit, wax beans, and heirloom tomatoes. These popsicles celebrate that season: bright, fruity, and just boozy enough to feel like a grown-up treat.

The Aperol Spritz traditionally combines Aperol, sparkling wine like Prosecco, and club soda with an orange slice. To make a popsicle-friendly version I swapped sparkling wine for still white wine (sparkling doesn’t freeze well) and left out the club soda so the flavors stay concentrated. Fresh orange juice replaces an orange slice for an easy, refreshing citrus note. The result is a vibrant, drinkable popsicle perfect for warm afternoons or casual gatherings.

  • 6 Popsicle Sticks

Ingredients

  • 1 Cup Aperol
  • 1 Cup Freshly-Squeezed Orange Juice about 4 oranges
  • 3/4 Cup White Wine

Instructions

  1. Juice your oranges (about 4) until you have 1 cup of fresh juice.
  2. Stir together the Aperol, orange juice, and white wine until combined.
  3. Pour the mixture into your popsicle mold, cover, and insert sticks.
  4. Freeze on the coldest setting for at least 8–10 hours, preferably overnight, since alcohol lowers the freezing point.
  5. To unmold, briefly run warm water over the outside of the molds if needed, then gently remove the popsicles.
  6. Serve and enjoy.

Notes

  • Because alcohol reduces freezing point, set your freezer to its coldest setting to ensure the popsicles solidify.
  • Store-bought orange juice will work, but fresh-squeezed gives a brighter, fresher flavor.
