No-Bake Cheesecake Recipe from SoNo (Quick, Creamy Slice)

SoNo’s No-Bake Cheesecake — a no-bake adaptation that matches its oven-baked counterpart in texture. This version comes from John Baracelli, who uses subtle flavoring and a touch of gelatin to set the cheesecake, giving you a reliably creamy, sliceable result without the need for a water bath.

SoNo’s Cheesecake

I’m enjoying a stretch of guest posts — this is my second in two weeks — and it’s been a lot of fun. This particular post is for Kid Diva, a food blogger I connected with on Twitter. We bonded instantly and joked that we must be sisters separated at birth. I’m still wondering how she ended up with all the rad genes while I became a nerd in Southern California.

Her blog, The Sugar Bar, is one of my favorites. If you want to discover some of England’s best neighborhood restaurants, her posts are a great place to start. The food photography alone will make your mouth water, and her original recipes are creative and approachable — they’ll inspire you to get into the kitchen and start baking.

Beyond her excellent blogging, Kid Diva is well loved on Twitter, and for good reason. If she’s gone for a day, her followers notice. For those not familiar with her, follow her on Twitter at @sugarbardiva to catch her updates and culinary finds.

Because she’s juggling student life and a busy schedule, I chose a no-bake cheesecake recipe that’s simple and quick to assemble. If Kid Diva finds time to make it, so can you.

If you’d like to visit her blog and see the original post and recipe, search for The Sugar Bar or Kid Diva online to find her site and full instructions.
