Black Bottom Cake Pops Recipe — Creamy Cheesecake-Filled Treats

One last share for a day filled with Cupid!
Instead of a box of chocolates, I made my girls their favorite: Cake Pops!
Valentine Black bottom Cake Pops
My sticks are a little messy — I was in a hurry trying to finish before the girls got home from school.
I used the Crazy Cake recipe for the pops for my youngest, who has an egg allergy.
For my oldest, I filled the center with a cream cheese chocolate chip (black bottom) filling.
Below are the recipes for the cake mix and the cream cheese chocolate chip filling.
I’m including the regular Crazy Cake recipe in case you want to bake the cake later. For Cake Pops, mix the Crazy Cake ingredients together in one large bowl.
*I used my Babycakes Cake Pop Maker.
Crazy Cake Recipe:
Ingredients
1 1/2 cups all-purpose flour
1 cup sugar
3 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon white vinegar
1 teaspoon vanilla
5 tablespoons vegetable oil
1 cup cold water
Directions
Preheat oven to 350°F (175°C) if baking as a cake.
Mix flour, sugar, cocoa, salt and baking soda in an 8-inch square pan or a large bowl if preparing cake pop batter.
Make three wells in the dry mixture. Add vinegar to one well, oil to another and vanilla to the third.
Pour cold water over everything and stir until well combined.
If baking as a cake, bake at 350°F for about 35 minutes. Cool and frost. For cake pops, use this batter in your cake pop maker or form balls from baked cake crumbs mixed with a binder of your choice.
Black Bottom / Cream Cheese Chocolate Chip Filling:
Ingredients
4 oz cream cheese, softened
1/2 egg (beat one egg and use half)
1/6 cup sugar (about 2 tablespoons plus 2 teaspoons)
Pinch of salt (about 1/16 teaspoon)
1/2 cup mini chocolate chips
Directions
Mix cream cheese, half an egg, sugar and salt until light and fluffy. Fold in the mini chocolate chips.
Fill each cake pop mold or cake pop ball: add cake batter or cake crumb mixture to about two-thirds full, then place about 1 teaspoon of the cream cheese filling in the center and cover with a bit more batter.
Cook according to your cake pop maker’s instructions; you may need a few extra minutes to ensure the filling sets. Allow the pops to cool completely, dip in melted chocolate or candy coating, decorate with sprinkles if desired, and enjoy.
