Slow Cooker Thai-Style Pulled Pork with Peanut Sauce

You’ve asked for more slow cooker recipes, and I happily obliged. I use my crock pot often — it’s one of my favorite ways to cook. While browsing Pinterest I found this dish and decided to try it. It turned out wonderfully flavorful and easy to make.

Slow Cooker Thai Pork with Peanut Sauce

Ingredients
2 pounds boneless pork loin, trimmed of excess fat and cut into 4 pieces
2 red bell peppers, seeded and cut into strips
1/2 cup prepared teriyaki sauce
2 tbsp rice vinegar
1 tsp red pepper flakes (adjust to taste)
3 cloves garlic, minced or crushed
2–3 tbsp creamy peanut butter

Optional garnishes
Chopped green onions (about 1/2 cup)
Roasted chopped peanuts (about 1/4 cup)
Lime wedges for squeezing

Instructions
Spray the slow cooker with cooking spray to prevent sticking. Place the pork pieces, bell pepper strips, teriyaki sauce, rice vinegar, red pepper flakes, and garlic into the slow cooker. Cook on low for 8–9 hours, or until the pork is tender and easily shredded.
Before serving, remove the pork and cut or shred it into bite-size pieces. Add the peanut butter to the sauce in the slow cooker and stir until it dissolves and the sauce becomes creamy and well combined. Return the pork to the slow cooker and toss to coat evenly with the peanut sauce.
Serve the Thai pork over steamed rice and finish with chopped green onions, roasted peanuts, and lime wedges. The lime brightens the sauce and the peanuts add a pleasant crunch.

This dish is great for meal prep, weeknight dinners, or casual entertaining. The slow cooking develops deep flavor while the peanut butter creates a rich, slightly sweet and savory sauce that complements the pork and peppers. Adjust the red pepper flakes if you prefer milder or spicier heat.
