Ingredients

  • 2 cups peaches fresh or frozen
  • 2 cups mangoes fresh or frozen
  • 1/4 cup lemon juice fresh or concentrate
  • 1/2 cup erythritol granules
  • 1/3 cup Ultra Gel Thickener or E-Z Gel Thickener

Instructions

  • Clean, peel, and slice the peaches and mangoes. If using frozen fruit, thaw slightly before the next step.
  • Combine the fruit, lemon juice, Ultra Gel thickener, and erythritol in a food processor or blender. Pulse or blend until smooth and well combined.
  • Spoon the jam into freezer-safe jars, leaving about 1/2 inch of headspace for expansion. Seal and label with the date, then freeze or refrigerate.

Notes

Fill jars leaving 1/2 inch space at the top to allow for expansion when freezing.
When frozen, this jam will keep for many months; if kept in the refrigerator, use within about three weeks once opened.
