Ingredients

  • 3 tablespoons olive oil
  • 2 teaspoons ginger fresh, grated
  • 1 orange zested and juiced
  • 6 carrots large, peeled and cut into large chunks

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the olive oil, grated ginger, orange zest and juice, and the carrot chunks. Toss well so the carrots are evenly coated. Spread the carrots in a single layer on a baking sheet.
  • Roast for 30 to 45 minutes, turning once or twice, until the carrots are tender and lightly browned at the edges.
