30-Minute Vegan Dinners: 15 Flavorful Recipes for Weeknights

This is a collection of simple, healthy and easy vegan dinner ideas you can make quickly. These plant-based recipes are beginner-friendly and most take 30 minutes or less to prepare.

10 simple and easy vegan dinner recipes to add to your meal plan! These healthy plant-based dinner ideas are good sources of protein and include lentil recipes, chickpea recipes, tofu recipes, vegan soups, wraps and more.

Recently I watched a video about trying vegan eating for a month. As I read the comments, one stood out: “We don’t need a handful of perfect vegans. We need a sea of imperfect vegans.” In other words, you don’t have to be 100% vegan to make a positive impact on animal welfare, the environment and your health.

My goal this year is to eat more plants, not necessarily to go fully vegan. I aim to make at least two of my three daily meals plant-based, and dinner is an easy place to start.

If you want to increase your plant consumption while cutting back on animal products, these simple dinner ideas are a great starting point. They’re also ideal if you’re already vegan. Anyone can make them — most are ready in around 30 minutes and don’t require specialty powders or unusual ingredients.
