Ingredients

  • 5 medium-sized potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 4-5 tablespoons freshly grated Parmesan cheese
  • ½ teaspoon Himalayan salt to taste

Instructions

  • Preheat the oven to 395°F (200°C). Line a large baking tray with parchment paper and set aside.
  • Wash the potatoes. If you prefer peeled potatoes, peel them now. Dry with paper towels and cut each potato into quarters so pieces are similar in size.
  • Place the potato pieces in a large bowl.
  • Drizzle olive oil over the potatoes, then season with garlic powder, dried rosemary, and salt. Add the grated Parmesan and toss until evenly coated.
  • Arrange the potatoes in a single layer on the prepared baking tray.
  • Bake for 30–35 minutes, or until the potatoes are golden and crisp on the outside and tender inside.
